  • 1cup vanilla soy milk
  • 12ounces milk or semisweet chocolate chips
  • 1package (14 ounces) silken tofu, cut into cubes
  • 1/2tablespoon pure vanilla extract
Five-Minute Chocolate Mousse


  • 1Place soy milk into the blender jar, secure lid and process on speed 10 for about 4 minutes until liquid is hot and steaming.
  • 2Turn the blender to speed 1. Slowly add the chocolate chips until fully melted and incorporated.
  • 3Add the tofu and vanilla and blend on speed 1 and turn up to speed 4 until all ingredients are fully blended.
  • 4Pour into individual cups and chill in the refrigerator until set, about 8 hours.
