Poached Pears

  • 2cups white Zinfandel, or another rosé style wine
  • 4cups water
  • 1/4cup granulated sugar
  • 1vanilla bean, halved and seeds scraped
  • 1two-inch piece orange peel, bitter white pith removed
  • 2tablespoons fresh lemon juice
  • pinchof sea or kosher salt
  • 4firm-style pears; peeled, halved and cored

  • 1Put all of the ingredients except the pears into a saucepan. Bring to a boil over medium high heat.
  • 2Reduce temperature and allow to simmer for about 30 minutes.
  • 3Add pears and cook until they are just knife-tender. That is, you should be able to pierce the fruit with the tip of a paring knife, getting little resistance. If overcooked, the pears will be mushy; if undercooked they will be tough and grainy.
  • 4Once pears are properly poached, remove with a slotted spoon or skimmer and serve.
