  • 2tablespoons ghee*
  • 1/4teaspoon turmeric
  • 1teaspoon ground cumin
  • 2teaspoons garam masala**
  • 11-inch piece of ginger, peeled and finely chopped
  • 1medium onion, peeled and chopped
  • 1jalapeño, seeded and chopped
  • 4garlic cloves, finely chopped
  • 1-1/2teaspoons sea or kosher salt
  • 3cups red lentils
  • 1large dried chile, left whole
  • 7cups water or broth
  • 8ounces fresh spinach
Slow Cooker Spinach Dal


  • 1Put the ghee into a skillet over medium heat. Once ghee melts, add the turmeric, cumin and garam masala. Sauté spices until fragrant, about 3 to 5 minutes. Add ginger, onion, jalapeño and garlic to the pan and sauté until soft and fragrant, an additional 5 minutes.
  • 2Add spice and vegetable mixture to the pot of a slow cooker along with the salt, lentils, chile and water or broth. Set on low for 4 hours. Taste and adjust seasoning. Stir in additional hot water or broth if a thinner consistency is desired. Stir in spinach in the last few minutes before serving so it wilts into the dal.
