  • 3pounds sweet potatoes, washed (unpeeled)
  • 2tablespoons unsalted butter, room temperature
  • 1-1/2teaspoons kosher salt
  • 2teaspoons packed brown sugar
  • 2teaspoons lemon juice
  • pinchground cinnamon
  • pinchground nutmeg
Sweet Potato Purée


  • 1Puncture the sweet potatoes a few times with a fork to release steam during cooking. Working in two batches, place half of the potatoes on a paper towel on a microwave-safe dish. Cook on high for 4-5 minutes for the first potato, plus 2-3 minutes for each additional potato. Turn over potatoes halfway through cooking. Let cool and repeat with the second batch.
  • 2Once the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl and mash with potato masher or hand mixer. Once thoroughly mashed, add remaining ingredients and stir to combine. Taste and adjust seasoning accordingly. Serve immediately.
